Uptown Parade in Bonifacio Global City is the home of premium restaurants. More and more of them are rising bringing new taste, new flavors, and new favorites. Premium Italian restaurant Salvatore Cuomo & Bar opened on June 2, and will occupy an entire 475 square meters of space at the Uptown Parade in Bonifacio Global City.
The restaurant is part of a food empire built by Salvatore Cuomo himself, a celebrated Italian chef, restaurateur and a famous personality hailed as the pioneer of Neapolitan pizza in Japan.
Salvatore Cuomo is very passionate in traditional Italian cooking in fact he started a campaign promoting Italy as the true origin of Pizza. Which I agree, I mean, Pizza must have originated from Italy because of the same ingredients and the similarity with pasta dishes.
Speaking of Pizzas, check out his D.O.C pizza or Denominazione Di Origine Controllata. It may only have mozzarella, cherry tomatoes, and basil but it’s very generous in taste. It uses fully-ripened cherry tomatoes, a luxurious amount of bufala mozzarella, basil and a splash of olive oil layered on a delicate crust.
The Quatro Formaggi or four cheese pizza is served with honey. Topping pizza with honey is something new to me, the only thing that tops my pizza is hot sauce.
I was able to catch Master Chef Salvatore Cuomo preparing a sumptuous t-bone steak for a guest, so I walked closer to watch him do his thing.
My eyes and nose were already having enjoying the scent and sight of the steak while my taste buds was wishing it was mine.
The restaurant can be categorized as premium casual dining because it’s somewhere between casual and fine dining. It’s where guests can look forward to good quality food and premium service in an elegant restaurant without the stiff ambiance, and enjoy a fine meal.
Together with Salvatore Cuomo is managing director Luigi Vera. “We wanted to raise the bar of Italian food in the Philippines. We believe that Salvatore Cuomo would be welcomed by the more discerning diners in Manila who’ve traveled extensively and know what Neapolitan-style Italian cuisine is all about,”
For appetizers we were served Caprese di Mozzarella di Bufala or the Buffalo Mozzarella Salad and the Tagliere di Affettati which is a serving of assorted fresh Parma ham, Neapolitan salami, and Mortadella ham.
